Walk in from the street, take your seat, and a sous chef serves you a real recent tasting menu, course by course, and tells you about the head chef and the idea behind each dish. The other guests and the staff are happy to chat.
The restaurants, chefs, menus, prices and history come from published sources, listed under About in each restaurant. The guests, servers and sous chefs are made-up characters; the head chefs are real people and never speak as characters. Rooms are reconstructed from photos and descriptions, so layouts are close but not exact. Menus change with the seasons: each one says which menu it is and where it was described.
